4 cups rolled oats ( Do Not Use Quick Oats)
½ cup amaranth grains uncooked (can be purchased at most health food stores)
1 cup coconut oil, melted
½ cup agave syrup
1 tbsp. Tahitian Gold® Ground Vanilla Beans
1 tsp. cinnamon
1 tsp. ground ginger
½ tsp. Tahitian Gold® Vanilla Fleur de Sel or sea salt
½ cup dried tart cherries, diced
¼ quarter cup of crystallized ginger, diced
½ cup golden raisins
½ cup dehydrated coconut flakes (unsweetened)
Heat oven to 325 degrees.
In a large bowl, place the oats, grains, dry spices and toss.
Melt coconut oil in a glass bowl and mix in the agave syrup.
Pour the above liquid into the bowl with the oats and mix.
Place the mixture on a greased cookie sheet or pan and spread out so the granola can bake evenly.
Bake for 10 minutes, turn with a metal spatula or other flat utensil. Continue baking another 10 minutes or until a nice light golden brown; the granola should still be a little moist as it will dry when it comes out of the oven; cool and place in bowl.
Add in the remaining ingredients: dried fruit and Vanilla Fleur de Sel to taste.
Note: Add more or less dried fruit depending on how sweet you would like your granola.
